Chef Pam went to Puerto Rico with her daughter for a college spring break trip and fell in love with the traditional cuisine. For this class we will start out by making tostones with two dipping sauces as the appetizer. Then on to the favorite dish in Puerto Rico, mofongo, which starts out with a bowl made of mashed yuca and plaintains and then we will fill the bowl with shrimp in a special sauce. To finish off the evening we will make mini pineapple rum cakes with fresh coconut whipped cream for the garnish. Can you say, "A Fuego!".
